I like Houston's too. They are part of the Hillstone chain, but very reliable one at a reasonable value and consistent from branch to branch, unless somehow you are more picky or don't care for their concepts. I like Bandera and R&D kitchen in the general OC area.

maybe more south costa mesa but also like butcher house brasserie for a more french leaning steakhouse and Darkroom for whimsical dining somewhat similar to the now defunct Detention/Trust venues in santa ana that have been out of business. Both Butcher house brasserie and Darkroom have some of my favorite burgers. Marche Moderne I think is very hit and miss but they are great when things land. I miss OC a lot.

The only issue with Houston's in Irvine is that it gets really busy. You might be able to get something at the bar, but sometimes getting a table is a two hour wait.
But if you are going between, say, 2 pm and 5 pm, you should be fine.

Another honorable mention for Costa Mesa (if you like Breakfast/Brunch) is Salty Horse.
Crazy busy on the weekend, but a week day brunch is well worth a visit.
