I like bolillo, because you can hollow out the center.
That makes more room for the stuffing. Red Romaine sauteed onions. The meat was cooked in a ghost pepper sauce. Not too many ghost peppers though. Only had enough to get your attention

Exactly! I use the bolillo for the same reason. You can hollow it out and it holds together well
