Try going off the strip. You'll find some great spots.
I like Echo andd Rig. They have 2 locations out here.

And if you're looking for something not too expensive try Jackson's bar and grill. It's a hole in the wall spot with good vibes. They have a one pound $20 rib eye plate. It's decent. And they're open 24 hours a day.

Will be there tomorrow and suggest Herbs & Rye, Oscar's, Bavettes and Golden Steer (hard to get into a GS).
But, during Sema all steakhouses will be hella packed!
My friends and I usually hit up Lawry's, Bavetts ans will try Papi steak (just for the atnosphere).
Of course the strip clubs as well!

I second Bob Taylors Ranch House. It is not fancy but the Smoked Prime Rib is awesome and different then all the Porterhouse snobbery.

Herbs and Rye is great and they have the best happy hour prices around and it's between 5-8PM
Herbs and Rye has a sister property, Cleaver that is only a mile or so from the convention center and is equally as good.
Good luck with Golden Steer, I've had an open table alarm set for reservations for months and it ain't gone off.

Barrys downtown prime steakhouse inside the circa is hands-down one of the best Las Vegas steakhouses
Im also a big fan of Papi steak inside Fontaine bleu the wagyu pastrami starter, Latkes, caviar mashed potato and the truffle corn are amazing

Golden steer is good, oldest steakhouse in Vegas. Service is also really good.
My go-to spot is Capital Grille at the Fashion Show mall. Great vibe, really nice views, and I haven't been disappointed in the many times I've been there. Food and service has always been great.
"The Steakhouse" at Circus Circus. I didn't expect this one, and I will say that I've never been, but a bartender at Bellagio told me that the steakhouse is really really good. Some research shows this can be true.

Go out to Summerlin, much nicer than the strip or Downtown Las Vegas.
I'm a Red Rock Casino guy and Harlo Steakhouse is right across the street, and it's great food and great ambiance.
