Pick a city.

Go to your preferred booking site
Select "flexible dates" for the month
Search orange county
See what days are what prices, sometimes you can find a 2-3 window in which a hotel is 1/2 or less its usual price
Same thing on marriott direct booking, hilton etc
Flexible dates is your friend. Plan your vacations around that if you can 
Since you are wanting costal prices are higher... because people love the beach during the summer.
Also less people will want to hang out over there possibly, because parking can be frustrating.

Search Cypress, Buena Park or Fullerton, and yes be flexible on dates and avoid weekends
|

My top 3 in the "West" category are: The Sonesta in Fountain Valley; Hotel Huntington Beach in HB; And the Courtyard by Marriott in Cypress.

The new Hilton in Buena Park at the Source Orangethorpe and Beach has had good rates for a new hotel. I have done a couple of PhotoShoots there.

i used to visit all the time! such a charming little hotel
out of the way of the usual traffic and disney chaos
