I was a farm boy, where we didn't have electricity, but lots of chickens, and eggs. I never knew that eggs don't need refrigeration. Also once a year we butchered a cow, and pig, and smoked the meat. No need for refrigeration for meat either. Old school.

Eggs sold in American supermarkets require refrigeration because our chickens are not vaccinated for salmonella. Refrigeration keeps salmonella growth to a minimum. Once an egg has been refrigerated it should remain refrigerated to prevent condensation from causing bacteria growth. Commercially produced eggs are washed in the US, removing the cuticle and making them more susceptible to bacteria.

My point is that you should refrigerate eggs that are commercially produced in the US. If you get eggs from your own chickens or you buy them in places like Europe you don’t need to refrigerate them

Scantron, eggs sold in supermarkets need to be refrigerated because they are washed to make them pretty. Washing removes the protective coating called bloom.
Unwashed eggs can sit on the counter for up to 3 months.
Wash them, and they're good for a month in the fridge.
I have chickens. Get a dozen every other day.
Brown, white, blue-green. I don't wash them.
I eat no more than three eggs a week, and give the rest away.
