Ya Copy and Paste does that a lot to. One should preview it first and delete what's in between.
Ps, what the media is saying about Bird Flu is total bullshit. Look for Dr Malone interview.

Even if you preview it and delete the extra shot as long as there’s an apostrophe it will do it

I usually don't post from my phone, so there's that.
I did make an elderly person's day today , returning her phone she left in my car in a timely manner.

It usually only happens when you click preview before you post. It also happens when you put certain emojis
To get it off you'll have to click preview again and manually delete the symbols. As long as you don't click preview before posting sometimes it won't do that

If you are on an iPhone: go to Settings, then search for smart punctuation and click off
See if that works
